Fufu (Pounded Boiled Cassava and Plantain

Fufu, a popular Ghanaian carbohydrate dish is commonly sold in local restaurants. It is served with a variety of soups and proteins. traditionally, it has a very labour-intensive preparation method but, simple alternatives exist that can be adopted for the a la carte menu.

Ingredients

800g fresh cassava
2 large unripe plantains

A. Preparation Method 1

Peel and remove the core of the cassava, cut into large pieces, wash and place in a saucepan.
Peel the plantain and cut into two, wash and add to the cassava . Cover with water and boil till soft.
Take off the heat, drain the water, allow to cool slightly and pound in a traditional wooden mortar with a pestle.
Traditionally prepared without salt

B. Preparation Method 2

Peel and wash the plantain and cassava (Frozen cassava and plantain can also be used).
Cut into small pieces and mill with water till totally smooth.
Pour in a cooking pot with long handle.
Stir and turn until a smooth firm constistency.
Take off the heat, portion and serve
